What Is Kohlrabi?

Kohlrabi is a vegetable translated from German meaning cabbage (kohl) and turnip (rabi). It is a family member of cabbages. It consists of a lower bulb portion (purple or light green), a middle stem area that is attached to the bulb and leads up to a dark green leafy top.

How Kohlrabi Is Used?

The whole vegetable is edible. The leafy portion can be removed from the stem and used just like collard greens, spinach, kale, or similar greens. They can be used in a salad, however, some people may find them too thick, particularly if the leafs are mature. The greens may be boiled or steamed to soften them and used as desired. The bulb is the more popular choice for consumption. It can also be snacked on raw or cooked in various ways (roasted, sauteed, boiled, etc.). It is often cooked as you would a potato. However, the bulb must be peeled to remove the rough outside layer. The stem can be peeled and used to compliment other vegetables in a mix.

Kohlrabi Taste

The kohlrabi bulb is crunchy like an apple and tastes like a toned down turnip or cabbage. The greens are much like kale or spinach. The stems are often compared to broccoli stems with a similar crisp texture.
